The global demand for protein will significantly increase over the coming years, due to the growing global population and the increasing standards of living. We provide a solution that will help counter this giant challenge. We valorize organic residuals from the food and agricultural sector by transforming organic waste products into protein-rich and nutritious food ingredients. We do this by growing edible filamentous fungi on organic waste products in a solid-state fermentation (SSF) process with minimal water and energy consumption. This increases the circularity and sustainability of our food production systems. Through the fermentation process, protein content and quality are increased, and a meat-like taste is added to the final fermented product.
