The mix of fat and salt was balanced out by the bitterness of the endives. Amidst the mastication of the rich hors d'oeuvres, an impromptu brainstorm session emerged and gave birth to Chau Time. This is Chau Time. Host Brian Chau is a food scientist, fungal fanatic and charismatic chemist.
