For over 50 years we have used our original recipe and the same artisanal water bagel method to make our bagels — the same today as our very first day. Our bagels start with the highest quality, all natural ingredients sourced from around the world. Then they are proofed, kettle boiled, bathed in cold water, and baked in our ovens. Although our traditional process is lengthy and labor intensive, each step in our process is crucial to making the finest old world bagels.

Since 1914, this landmark institution has been owned and operated by 4 generations of the Russ family. For 103 years, Russ & Daughters has provided the tastes and traditions of a true New York experience. In 2014, on the 100th anniversary of Russ & Daughters, 4th Generation Owners Josh Russ Tupper and Niki Russ Federman opened RUSS & DAUGHTERS CAFE: restaurant on Orchard Street, the street where their great grandfather peddled herring from a barrel and pushcart. In 2016, they opened RUSS & DAUGHTERS AT THE JEWISH MUSEUM: take-out appetizing counter and restaurant. RUSS & DAUGHTERS BAGELS & BAKERY launched in 2016, where Russ & Daughters makes all of its own bagels, bialys, shissel rye bread, pumpernickel, babka, black and white cookies, challah, and traditional baked goods.
Russ & Daughters has been honored with awards from the NYC Mayor's Office, Manhattan Chamber of Commerce, Foundation for Jewish Culture, and State Senator Daniel Squadron who introduced a resolution that was unanimously passed by the New York State Senate.
Russ & Daughters has received praise in countless publications, and the restaurant was #2 on Pete Wells's New York Times list of "The 10 Best New Restaurants of 2014."
Joel Russ, an Eastern European immigrant who arrived in America in 1907, started the business to cater to the throngs of Jewish immigrants settling in NYC’s Lower East Side. In 1920, he opened his store at 179 East Houston Street, after a few years of operating a storefront around the corner. He renamed the business "Russ & Daughters," after his daughters who joined him as the 2nd generation. Mark Russ Federman succeeded as the 3rd Generation, and is now retired. He’s the author of a celebrated memoir Russ & Daughters: The House That Herring Built. Russ & Daughters is now owned by the 4th Generation of the Russ family: Niki Russ Federman and Josh Russ Tupper.
