Central es un centro de gastronomía conformado por un grupo interdisciplinario colaborativo motivados por la curiosidad de explorar, registrar y visibilizar la diversidad del Perú. Desde Central buscamos conectar, conocer y re-conocer los insumos, paisajes, cultura, tradiciones e historia, únicos como la gente que las vive y narra en estos territorios. Central propone un viaje por los diversos ecosistemas del Perú en distintas alturas desde las profundidades del mar a -25 msnm hasta los Andes a más de 4050 msnm, atravesando la costa desértica, los valles y las distintas amazonías. Esta expedición no tiene destino ni final, se centra en el constante movimiento, en la observación y el respeto por la temporalidad y la estacionalidad que la tierra nos dicta. Central is a gastronomy center formed by a collaborative interdisciplinary group motivated by the curiosity to explore, record and make visible the diversity of Peru. From Central we seek to connect and learn about the products, landscapes, culture, traditions and history, unique as the people who live and narrate them in these territories. Central proposes a journey through the diverse ecosystems of Peru at different altitudes from the depths of the sea at -25 masl to the Andes at over 4050 masl, crossing the desert coast, the valleys and the different Amazonian regions. This expedition has no destination or end, it focuses on constant movement, observation and respect for the temporality and seasonality that the land dictates.
