Welcome to The Shed Distillery, and the Curious Mind of PJ Rigney A creator of new recipes, an inventor, an experimenter – PJ dreamed of building his own distillery, but not just any distillery. The location was crucial – it had to be wild, un-manicured, in the heart of rural Ireland. A place of curiosity & inspiration, surrounded by nature, immersed in rich history. He discovered the beautiful village of Drumshanbo Co.Leitrim, on the shores of Lough Allen, at the foothills of Sliabh an Iarainn (The Iron Mountain), and PJ knew he had found the location for his distillery.

The Dingle Distillery is an independent, family owned distillery located on the edge of the scenic town of Dingle, Co. Kerry. The Dingle Distillery was crafted and conceived by three independent spirits: Oliver Hughes; Liam LaHart and Peter Mosley. Oliver, Liam and Peter are the people behind Porterhouse Brewing Company; one of the pioneers of craft brewing in Ireland in 1996. The Dingle Whiskey Distillery came into being in the cold winter of 2012. Ireland was beginning to come out of the greatest recession in many people’s memory. However unbeknownst to many, the most significant event in the Irish whiskey industry in decades was happening in a tin shed in Dingle. Witnessed by few, the first Dingle Whiskey Casks were filled on the 18th December 2012. Three years and a day later on the 19th December 2015, one cask, Cask No. 2 was released. Our whiskey was born. Our distillery was ready. We have always had quality over quantity at the forefront of our thoughts. We never had any interest in distilling enormous quantities of bland whiskey. We understand and respect the concept, it just wasn’t for us! We aren’t passionate about bland spirit. We are hugely passionate about flavoursome, well-crafted spirit. The Dingle Distillery produces regular releases of small batch Irish whiskey. When we released our First Dingle Single Pot Still Release, it made the Dingle Distillery just the second distillery on the island of Ireland to produce a pot still whiskey. As well as regular whiskey releases, the Dingle Distillery produces Dingle Gin and Dingle Vodka. Dingle Gin was awarded the title of World's Best Gin at the World Gin Awards 2019.
