In 2019 PAUL is celebrating its 130 year anniversary, arriving at this impressive milestone via five generations dedicated to creating great-tasting bread. It’s a remarkable story of one family whose belief in traditional, labour intensive baking methods and insistence on top quality ingredients have created the largest bakery in France today, and taken the PAUL name to 28 other countries.
PAUL has always been a community bakery, bringing the authentic taste of real French baking to its local customers. Whether they meet at cafes to chat with friends over a coffee and a pastry, or take food home to enjoy with friends, PAUL is dedicated to sharing its passion for food with customers all over the world. The recipes for bread, viennoiserie and patisserie have been handed down through the family for over one hundred years. The bakers are true artisans, with years of training.
PAUL UK opened in London in 2000 with its flagship shop and restaurant in Covent Garden. There are now a total of 37 shops in the UK, primarily Central London locations. Expansion plans are undergoing. This expansion will provide great opportunities for more people to join the business and to develop a career as the company grows.
Today PAUL has more than 500 stores operating in 29 countries, including France, Holland, Japan, Kuwait and the USA. It is still owned by the founding Holder family.
The Daisy Green Collection is an Australian-inspired hospitality group operating 18 unique venues across London. Sites include the Sir Peter Blake designed Darcie & May Green barges on the Grand Union Canal in Paddington, Larry's Bar inside the National Portrait Gallery, and Colony Room Green — an immersive art installation and bar curated in homage to the historic Soho
members' club. The group was ranked 66th in The Sunday Times 100 fastest-growing UK private companies in 2025. Radio Lamington, a charitable baking initiative of Daisy Green, has donated close to 100,000 lamingtons to NHS frontline workers since 2020,.
Bread Ahead was founded by Matthew Jones in 2013, who has been in the business and making bread for over 25 years. His mission is to bring quality baking to the masses.
Bread Ahead opened its doors in September 2013 supplying fresh produce daily to Borough Market customers and a range of local restaurants and delis. The Bakery School opened in February 2014 and is designed to show the public just how easy baking good bread can be.
Since then, Bread Ahead has grown – the school at Borough has expanded and Matthew has since opened a second bakery and school in Pavilion Road, Chelsea and a brand new bakery and café in Beak Street, Soho.
The Bread Ahead Baking School is home to ever popular baking workshops including Doughnuts, Great British Baking, Nordic and Gluten-free to name a few. Led by Bread Ahead’s masterful bakery school tutors, they offer an insight into proper artisan baking. Gift vouchers are available to buy for the half and full day workshops all year round.
In August 2017, Bread Ahead published its first ever cookbook, Baking School: The Bread Ahead Cookbook.
