We place emphasis on not only how we treat the guest (which is of course vitally important), but also how we treat our co-workers and people we come in contact with outside of work," says Hoke. 'Being Kind' is an attitude and it doesn't start or stop when you enter the work place, or in our case the cafe, he says. "It starts with who you are, how you want your day to go and wanting to make a positive difference to anyone that you have the pleasure of coming in contact with." Although many of CC Holdings' other restaurants provide ample comfortable seating, Copper Moon does not. Most travelers want to get in, get their coffee and make it to their gate, where there is more than enough seating. The café and kiosk are designed differently than your typical coffee shop for this very reason, with a focus on an open air, breezy design. Hendren also adds some thoughts about the unique and organic coffees offered by the café. "The coffees we offer are the best available anywhere in the world," she says. "Fresh, high-quality ingredients and a 'not willing to compromise' attitude are the benchmarks for our product offerings."
