At Glendalough Distillery, we craft luxury spirits in the Wicklow Mountains, Ireland, using a progressive blend of traditional techniques and innovative practices. Our approach is rooted in the natural heritage of our surroundings. Inspired by the majestic landscapes of Wicklow, we aim to capture the unique sights, smells, tastes, and sounds of our home in every spirit we produce. Our Process & Commitment to Quality: Wild botanicals are hand-picked daily from the surrounding mountains and delivered to our distillery within hours. Our gin is meticulously slow distilled in small batches, ensuring each batch is uniquely refined through expert, sensory-driven techniques. We mature our spirits primarily in American white oak and enhance our whiskeys by finishing them in secondary—and occasionally tertiary—casks. By incorporating Irish, Japanese, French, and Spanish oak, we create distinctive flavour profiles that stand out in a competitive market.
