The idea for Pinyon came to us during a trip along the shores of Spain, Italy, Greece, and beyond. On a walk through a small coastal village, we came across a solitary pinyon pine. It wasn’t the tallest or most striking tree, but it seemed to belong to the landscape in a way that felt both natural and profound. According to the villagers, this particular tree was revered not only for its resilience but for the extraordinary pine nuts it produced—tiny treasures with a flavor unlike any other. For generations, families had gathered these delicacies, believing they carried a quiet, almost mystical energy.
