Sushi & Co. was founded in 2010, with the goal to be "A franchise brand that supply fresh Japanese produce to Australian customers". From humble beginnings with limited fund and resource, the company has grown in the next two years from 1 store to 5 stores in five locations - Bayswater, Blackburn, Frankston, Mornington and Mount Martha. Worth mentioning that Sushi & Co. was trading as "Sushi & Coffee" back to then. The sister and brother group were trying to establish a direct connection between the traditional eastern cuisine, sushi, and the most famous western drink, coffee by simply combine the two together as a trading name. The attempt was ended in early 2013 as the team eventually recognised the competition in sushi business were getting more and more fierce. To combine sushi with coffee will end up as a perception to customers that "YOUR SUSHI DOES NOT HAVE THE AUTHENTIC TASTE". The team then brought in professionalism in mid 2013 by completed the followings: 1. Reburising "Sushi & Coffee" into "Sushi and Co. The Sushi & Co. logo combines illustrations of Fresh Fish, Rice, Sushi Roll, Sakura Flower and a Kiosk. 2. Set up a fully HACCP Certified wholesale warehouse. Sushi & Co. continually carried both retail and wholesale business portfolios in early 2014 until the team sensed the market was gradually changed by the ISSM (In-store sushibar model). The team start seeking new business opportunities by increasing its public exposure. As a result, Ritchies Stores Group found Sushi & Co., and the two companies start planning their new business endeavour. In April, 2015, The grand opening of Sushi & Co. @ Ritchies Supa IGA achieved great success. The new in-store sushibar not only increase the traffic flow of the supermarket, but also increase the sales in other departments. With the great success of the first store, Sushi & Co. and Ritchies Group lunched their second and third stores in the same year.
