Designed by Technē Architecture + Interior Design, the venue playfully references the concept of ‘the wateringhole’ as both a feature of the natural landscape and to the old colloquial term for a public bar. The vibrant watering hole at the heart of Greame Base’s classic children’s book ‘The Waterhole’ has inspired the venue fit-out for Hightail. The expansive 1052 square meter site has been transformed into an immersive large-scale venue, housing a number of zones and two bars. Located in the centre of Melbourne’s urban jungle – Docklands, Hightail will provide nearby workers with an oasis of fun at the corporate location. The wine list focuses heavily on Australian winemakers and a handful of French producers for Champagne. The list has been designed to hit every mark; featuring a large by the glass selection, there are also a number of premium bottle options available for those special occasions. The back bar has a big focus on Australian craft spirits and these form the basis of the cocktail list, with the leading example being the Australian Negroni. Tap beers are geared towards the lagers and ales, with 16 beers, 2 rotating, across 64 taps. Bottle beers mainly focus on Australian craft, but there are also a few curve balls in there such as New Zealand’s Jungle Boogie Blood Orange Sour, Portland’s low gluten Omission Lager and Kaiju Krush’s Tropical Pale Ale.
