Hibernia restaurant Information

Hibernia is a small, intimate and elegant restaurant, with 11 tables set in an open air West Indian house by the sea. In 2000 Mary Pat & Raoul added an art gallery as well. It specializes in contemporary Asian Art collected during their annual travels. It is open during restaurant hours or by appointment. Raoul, who has represented Anguilla on an international level, has formal training from the Ecole Hoteliere of Strasbourg, France, and cooking schools in Laos, Thailand and Hong Kong. He creates French/Asian dishes using the freshest local seafood, high quality meats imported from the US and France and little known Asian products, discovered during their annual travels in Asia. Mary Pat runs the dining room, and will advise you on the menu and Hibernia's extensive wine selection. The wines are purchased personally in France from their favourite wine producers.
