Domigo coffee is grown at Mutchilba, which is west of Mareeba, at an elevation of 510 meters above sea level on Alluvial soil. We use a mechanical harvester that was built in Brazil. Our coffee is processed using a McKinnon Aagaard water grading system which uses a water trough to separate the heavy beans from the lighter seconds. This has made the sorting of the beans easier as the heavy beans do not have black or stinker beans. The coffee is fermented in tanks and when this is completed the coffee is then passed through a pump which washes the beans. After washing, the beans are sun dried on plastic sheets and then bagged for storage until they are hulled for roasting. With sundry coffee no fuel is used in the drying process. All of the coffee is turned by hand using rakes. And if you are ever up this way, drop in to say boo!
