Owned and run by the Hemmes family for over 60 years, Merivale began as an iconic fashion house started by John and Merivale Hemmes. Merivale’s fashionable beginnings were soon followed by a venture into hospitality, opening a Thai tea café within their Sydney CBD fashion building in 1970. From here, Merivale’s hospitality roots were firmly planted. Merivale is now led by CEO Justin Hemmes, whose creativity and knack for pushing the boundaries has made Merivale what it is today. Hemmes has become a pioneer within the Australian hospitality industry, growing the ever-expanding Merivale portfolio to over 90 brands and venues.

Nobu, the world-renowned Japanese restaurant recognized for pioneering a new-style Japanese cuisine, started as a business partnership in 1994 between Chef Nobu Matsuhisa and his partners, Academy Award-winning actor Robert De Niro, producer Meir Teper, and restaurateur Drew Nieporent. Originating in New York as the flagship restaurant, the Nobu brand is now an empire that spans five continents with over 55 restaurants and growing. Home of Australia's Seafood, Sydney Fish Market (SFM) is the largest market of its kind in the Southern Hemisphere and the world's second largest seafood market in terms of variety outside of Japan. A working fish market, SFM sources' product both nationally and internationally and trades over 14,500 tonnes of seafood annually - with up to a hundred species of sustainable Australian seafood traded every day. SFM employs approximately fifty-seven staff to organise the weekday wholesale auction, promote Sydney Fish Market as the centre of seafood excellence and operate the Sydney Seafood School. Since opening in 1989, Sydney Seafood School has played an important part in persuading Sydney residents to eat more fish. The School is considered to be one of Australia’s leading cooking schools.
