"The Collins Quarter Cafe Is An Innovative Sensory Lab That Integrates An Australian Coffee House Vibe With An Award-Winning Chef's Eclectic, Globally-Influenced Cuisine." The Collins Quarter will open in Savannah’s historic district on the corner of Bull and Oglethorpe Streets in early June. The Collins Quarter is styled after the coffee café genre of restaurants that has been in vogue in Australia in recent years with Melbourne know as the café capitol of Australia. The concept is to pair a unique specialty coffee experience with very innovative cuisine in a casual café environment. The Collins Quarter is result of a native of Melbournian Anthony Debreceny, who, after doing business here for the past 5 years, saw an opening in the coffee and food paring and decided it was time to bring the Melbourne coffee/food experience to Savannah.
